Our Favourite Oatmeal Cranberry Cookies / by Linda Klimack


These chewy and tasty cookies are so good, you may want to double this:

1 cup granulated sugar
1 large egg, beaten
1 teaspoon vanilla extract
1½ cups quick rolled oats
1½ cups dried cranberries

1½ cups unbleached all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 cup butter
½ cup packed brown sugar

  • Cream butter and sugars until fluffy
  • Mix in beaten egg and vanilla
  • Add dry ingredients
  • Mix in oatmeal and cranberries
  • Refrigerate 1 hour
  • Preheat oven to 350℉
  • Place walnut-sized pieces of dough on greased cookie sheet (allow room to spread) - Bake for 10 minutes
