Our Favourite Chocolate Chip Cookies / by Linda Klimack


1 cup butter
1 cup brown sugar
¾ cup granulated sugar
2 large egg
1 teaspoon vanilla extract
2 cups all purpose unbleached flour*
1 teaspoon salt
1 teaspoon baking soda
1 cup large flake rolled oats
1½ cups chocolate chips
1 cup walnuts

* You can use 1 cup of whole wheat pastry flour in place of 1 cup of all purpose unbleached flour

  • Preheat oven to 350o F.
  • Cream shortening and sugars until fluffy. - Mix in beaten eggs and vanilla.
  • Add dry ingredients.
  • Stir in chips and walnuts.
  • Drop on a greased cookie sheet.
  • Bake 8-10 minutes.

This is one of those forgiving recipes, where you can replace pecans for the walnuts or other seeds, such as sunflower or pepitas.
