Chocolate Mousse

Dear Friends:

The recipe this month is Chocolate Mousse. Just a fancy name for chocolate pudding. And who does not like chocolate pudding? This is comfort food at its best. 

What is different about this recipe is there is no “on the stove cooking” and trying to figure out if it is thick enough and not burnt on the bottom. You turn away for one minute to wash that dish and when you turn back it is bubbling over the top and then you have to clean the stove!

This recipe is made in the food processor. A bit fiddley with having to beat the egg whites to stiff peaks, but I just use my hand processor for not quite stiff peaks.

I made this a couple of weeks ago because I needed a dessert and still did not have my new oven. (They promised me March 11 it will be installed.) It was a hit because I think we are so focused on complicated multi layered cakes that we forget the simple desserts. This is a lick the spoon kind of dessert, both while you are making it, and while you are eating it!

It is easy to get your friends to help you cook, when you promise they can lick the spoon!

P.S. This is not our only chocolate pudding recipe, we also have Pots de Creme. Same idea only you have to cook a custard first, then pour this over the chocolate. Easy!

P.P.S. I forgot to mention, you can also give the chocolate different tastes, by adding a few drops of the flavoured oil, or by using the different chocolates. Whether you use milk, semi or bittersweet is up to you. I often use ½ cappuccino and ½ bittersweet, then decorate with a few Valrhona Buttons. And of course whipping cream.

P.P.P.S. Both recipes make enough that there are leftovers. I got up early on Sunday and ate the two leftover ramekins for breakfast! I didn’t want to be tempted the rest of the day!
